Colombian Organic Sierra Santa Rosa is an organically grown Colombian single-origin from the Santa Rosa highlands — grown at altitude on volcanic soil by smallholder farmers using traditional, chemical-free methods. Balanced, chocolatey, citrus-bright, and built for the pour-over. A full pound per bag, hand-roasted in 25-lb small batches by master roasters with 20 years at the drum.

Tasting notes: Milk chocolate, caramel, orange zest, almond, bright balanced acidity, clean finish.

The farm story: Santa Rosa de Cabal sits in Colombia’s Coffee Axis (Eje Cafetero) — the region that produced the coffees that built Colombia’s specialty reputation. The smallholder farms here grow shade-grown Arabica at altitude on rich volcanic soil, without synthetic pesticides or fertilizers (though not certified organic). The combination of high elevation, volcanic soil, and organic growing practices produces the balanced, chocolate-forward cup Colombian specialty coffee is known for.

Brew recommendation: Pour-over or drip at a 1:16 ratio, medium grind. The balance makes it forgiving — a great coffee for dialing in a new brew method.

A hidden detail: Colombia’s Coffee Axis (Eje Cafetero) — which includes Santa Rosa de Cabal — was designated a UNESCO World Heritage site in 2011 for its cultural landscape.
