In Chiapas, Mexico, the FEDESI coffee groups consist of small-scale producers, each managing approximately 3 acres of land. Despite their modest size, these groups are remarkably self-sufficient, operating their own wet mills and patios for drying coffee. This hands-on approach ensures quality control at every step. Annually, they produce a certified volume of 32,000 bags of fairtrade organic coffee, a testament to their commitment to sustainable and ethical practices. This volume not only supports the local economy but also contributes significantly to the global organic coffee market, showcasing the unique skills and dedication of Chiapas's coffee farmers.






Process & Harvest

Fully Washed coffee is meticulously processed, where cherries are depulped, fermented, and thoroughly washed to remove mucilage. This technique highlights the bean's pure flavor, accentuating clarity and cleanliness in the cup profile.
